Fresh salads are a must in the summer. As temps rise, here’s a list of some of our favorite salads to try out in the warmer months.
Goop’s Louie Shrimp Salad
Gwyneth Paltrow’s famous lifestyle site, Goop, is also a culinary bible. On the site is the Louie shrimp salad.
Ingredients for the marinade:
- 120g of shrimp
- 1/2 tsp of tabasco
- 1 pressed head of garlic
- 1 tbsp of olive oil
Ingredients for the sauce
- 50g of mayonnaise
- 1tbs of chopped shallots
- 1tbs coarsely chopped capers
- 1tsp Tabasco
- 1 lemon zest and juice
For the salad
- 1 small lettuce
- 50g cherry tomatoes
- 1 cucumber, diced
- 1 half avocado, diced
- 1 hard-boiled egg, quartered
How to:
Combine shrimp with marinade ingredients. Let the set in refrigerator. Mix all ingredients for the sauce in a bowl and put aside. Mix with the veggies in a salad bowl (minus the salad). Heat a skillet over medium heat before grilling the shrimp for a minute on each side. Spread the lettuce leaves on a large dish, put the vegetables in the center. Finish with eggs and prawns. Season with the sauce. Serve.
2. Alexandra Ashback’s Tomato Salad
Alex Ashback, a expert in healthy cooking and wellness, shares her best recipes on her Instagram account @veggininthecity. Her simple and delicious tomato salad will make you crave it all summer long.
Ingredients
- 4 large organic heirloom tomatoes
- 1 avocado
- 2 tbs extra virgin olive oil
- 1 tbs balsamic vinegar
- 1 pinch sea salt
- 1 pinch black pepper
How to:
On a large plate: arrange the tomatoes in thin slices. Cut the avocado in crescent shapes prior to arranging them between the tomatoes. Season.
3. Lorinda Breeze’s Citrus Salad
Lorinda Breeze is both an illustrator of children’s books and an outstanding cook. She’s one of New York’s key figures. Originally meant to lighten up the gargantuan Thanksgiving menu, this fresh fennel salad recipe is also perfect for summer.
Ingredients:
- 125g of parsley
- 1 sachet or a small basket or arugula
- 1 orange cut into thin slices
- 120g of minced fennel
- 40g minced parsley
- 40g minced mint
- 60g feta cheese, cut into pieces
- 60g of crushed pistachios
- 60g of pomegranate seeds
- 30g of dried cranberries
- Salt and pepper
For the sauce
- 4 tbs of extra virgin olive oil
- 2 tbs of wine vinegar
- 1 tbs soup of honey
- 1 tsp of Dijon mustard
How to:
In a large salad bowl, add all the salad ingredients except the feta. In a separate bowl, combine the sauce ingredients. Pour the sauce into the salad bowl. Sprinkle with feta.
4. Martha Stewart’s Summer Waldorf with Yogurt-Tarragon Dressing
Martha Stewart is well-known for her incredible recipes, so this list wouldn’t be complete with something from her. The juicy plums and toasted almonds replace apples and walnuts in this summertime version of the classic Waldorf salad.
Ingredients
- 1 small head fennel, bulb thinly sliced, fronds picked
- 2 bone-in, skin-on chicken-breast halves (about 1 1/2 pounds)
- Salt and pepper
- 3/4 cup plain yogurt
- 2 tbs extra-virgin olive oil
- 1 tsp finely chopped tarragon
- 2 heads butter lettuce
- 3 plums, pitted and sliced into thin wedges
- 1/3 cup toasted almonds, coarsely chopped
How to:
- Bring 2 inches of water to a boil with fennel stalks in a large saucepan. Add chicken and 3 tablespoons salt (is chicken is not totally submerged, add water to cover). Reduce heat to medium-low; simmer until a thermometer inserted into the thickest parts of chicken registers 165 degrees, 20 to 25 minutes. Transfer chicken to a cutting board; let cool 10 min.
- Whisk together yogurt, oil, tarragon; season with salt and pepper. Remove chicken skin. Remove meat from bones and thinly slice against the grain. Divide lettuce, chicken, sliced fennel, and plums among 4 plates. Top with dressing, almonds, and fennel fronds; season with salt and pepper. Serve.
5. Kourtney Kardashian’s Antioxidant Watermelon Salad
On her Poosh site, Kourtney Kardashian has revealed many of her favorite recipes. That includes this summer salad, packed with vitamins and only takes about 15 minutes to make.
Ingredients
- 240g of watermelon
- 120g of blueberries
- 180g of raw cauliflower, cut into thin pieces
- 240g of cucumber, cut into pieces
- 35g of minced red onion
- salt and pepper
- 2 tbs of olive oil
- 1 tbs of lemon juice
- chopped basil
- a few pomegranate seeds
How to:
In a salad bowl, add onion, lemon juice, olive oil, salt and pepper. Then cut the watermelon, cauliflower, and cucumbers into pieces and chop the herbs. Add each ingredient to the bowl, mix and finish by sprinkling with fresh herbs.
