Christmas makes us want to be extra productive in the kitchen, especially by using cinnamon. The opportunity to discover these comforting sweet cinnamon recipes that put this star spice of the holidays in the spotlight.
The Social Food Pumpkin Spice Latte Cheesecake
Ingredients
For the homemade “pumpkin spice” mix
-4 tablespoons of cinnamon
-2 1/2 teaspoons of powdered ginger
-2 teaspoons of powdered nutmeg
-1 teaspoon of allspice
-1 teaspoon of ground cloves
The base
-150 g of Speculoos biscuits
-75 g of melted butter
-1 pinch of spice pumpkin
For the “cheese”
-300 g of cream cheese
-200 g of Greek yogurt
-100 g of pumpkin puree
-2 tbsp of pumpkin spice mix
-115 g of caster sugar
-2 sheets of gelatin
For the whipped cream
-200 ml of liquid cream
-50 g of sugar
-Liquid caramel
Instructions
Crush the biscuits, then add the cooled melted butter and the brown sugar.
Mix well and spread on the bottom of a cake tin and leave to harden in the fridge.
Soften the gelatin in a bowl with cold water.
In a salad bowl, mix the cream cheese, yogurt and sugar.
Remove the gelatin from the cold water and after draining it, dilute it with a tablespoon of boiling water then add to the cheese mixture.
Beat everything well with a whisk.
Pour the mixture onto the bottom of hardened biscuits and leave to set for at least four hours in the fridge, overnight works.
Whip the whipped cream and place it on top of the cake, finally add the liquid caramel.
Gramme’s Chai Latte Recipe
Ingredients
-2 g of ground black pepper
-3 g of cardamom
-8 g of star anise
-2 g of ground cinnamon
-2 g of cloves
-15 g of ground ginger
-40 g of white sugar
-15 g of black tea
-1 l of water
Instructions
- In a large saucepan, pour 1 liter of water.
- Add all the ingredients except the tea.
- Bring to the boil then simmer for 30 minutes or until the syrup has reduced by three quarters.
- Once the syrup has reduced sufficiently, turn off the heat and add the black tea.
- Let the tea steep for 5-6 minutes, then strain everything.
- Chill overnight.
- To serve — To make a 250ml chai latte, pour 20g of chai syrup into a saucepan and add 250ml of milk.
- Let it heat through while stirring.
- Once the drink is hot enough, pour into a glass. You can sprinkle the drink with ground cinnamon.
Yoni Saada’s Cinnamon Whipped Cream
Ingredients (for 6 people)
– Whole liquid cream 50 cl
– Icing sugar 40 g
– Ground cinnamon 1 tsp
Instructions
- Place a salad bowl in the freezer 20 minutes before whipping the cream.
- Using an electric mixer or by hand, whip the very cold liquid cream in the refrigerated salad bowl with the icing sugar and cinnamon.
- Serve with a citrus salad. Keep for ½ day in the fridge
Christine Rudolph and Susie Theodorou’s Cinnamon Roll Recipe
Ingredients :
-350 ml whole milk
-2 cinnamon sticks or 6 cardamom pods, lightly crushed
-200 g unsalted butter, cut into small pieces
-500 g flour
-225 g sugar
-7 g dry baker’s yeast
-2 tbsp ground cinnamon or cardamom
-½ tsp salt
2 tsp sunflower oil
-1 egg yolk beaten with 2 tbsp milk,
for the glaze
-2 to 3 tbsp pearl sugar
Instructions
- Gently heat the milk with the cinnamon or cardamom pods and 50g butter.
- In a food processor fitted with a dough hook, knead the flour, 75g sugar, the yeast, 1 teaspoon ground cinnamon or cardamom, and salt.
- Remove the spices from the milk and gradually add to the dough. Knead until smooth. Place in a large, oiled bowl. Cover and leave to rise for 2 hours.
- Mix together the remaining spices and sugar.
- Reserve 3 tablespoons and mix the rest with the remaining butter.
- Knead the dough again and roll out into a 35x45cm rectangle on a floured work surface, with the longest side facing you.
- Spread the spiced butter evenly over the entire surface of the dough.
- Fold the top third of the rectangle towards you, then fold the bottom third over.
- Cut this rectangle into 12 strips of 3.5 × 11 cm.
- Cut each strip in half lengthwise, leaving one end intact.
- Twist, then roll the twist around itself around your fingers.
- Tuck the ends under the dough knot.
- Arrange the buns on 2 baking sheets covered with baking paper.
- Cover and leave to rest for 30 minutes in a warm place.
- Preheat the oven to 190 °C.
- Brush the dough with the beaten egg and milk mixture, then sprinkle with pearl sugar.
- Bake the buns for 25 to 30 minutes.
- Heat the 3 tablespoons of spiced sugar with 50 ml of water then simmer for 3 minutes.
- Let the syrup cool. Brush the buns 2 to 3 times with this syrup.
