How To Make Perfect Halloween Ghost Meringues

For Halloween, food photographer Madeline Lu shares the recipe for her adorable ghost meringues. As a plus, they come in a vegan option. The ghost meringues recipe is simple and effective for delighting both young and old at Halloween.

Ingredients

  • 125ml chickpea juice or 3 egg whites
  • 250g caster sugar
  • 60g cream of tartar (optional)
  • Half a tablespoon of freshly squeezed lemon juice
  • Black food coloring

Instructions

  • Preheat the oven to 200°F and line two racks with baking paper.
  • Pour the chickpea juice or egg whites into a bowl.
  • Begin beating the egg whites or chickpea juice.
  • Gradually add the lemon juice, cream of tartar (optional) and sugar. Beat everything until the mixture is firm and shiny.
  • Then place the mixture in a piping bag to create ghost shapes. Compared to egg whites, chickpea juice does not hold for as long: you must therefore work quickly before placing the baking rack in the oven.
  • Bake for between 1 hour and 1 hour 15 minutes. Then turn off the oven by slightly opening the door. Let the ghosts dry for between 2 hours and overnight.
  • Draw the eyes and mouth with food coloring.
